Tomato Bruschetta

Ingredients:

  • 4-5 Fresh tomatoes, diced
  • 2-3 Cloves finely chopped garlic
  • 10 Fresh basil leaves, shredded
  • Small handful of chopped fresh parsley
  • 1-2 Tablespoons olive oil
  • Salt and pepper to taste
  • Pinch of red pepper flakes (optional)

Directions:

  1. Dice tomatoes.
  2. Add 2-3 cloves finely chopped garlic, shredded fresh basil leaves, chopped fresh parsley, olive oil, salt and pepper to taste.
  3. If you like spicy food, add a pinch of red pepper flakes; optional.
  4. Toss and let sit for an hour.
  5. Then mix the resulting liquid back into the salad and serve over toast, eating immediately.

Note:

You can make the tomato mixture, but instead of serving it on toast, toss with drained, cooked pasta for an easy, fresh pasta salad, adding olive oil and salt as needed.
