Ingredients:
- 2 15-oz cans, black beans, rinsed and drained
- 2 cans pinto beans, rinsed and drained
- 2 15-oz cans of white corn, rinsed and drained
- 1 4-oz can chopped green chilies, undrained
- 1 jalapeno pepper, seeded and finely chopped (optional)
- 1 red bell pepper, cored, seeded, and finely chopped
- 1 green bell pepper, cored seeded, and finely chopped
- 1 small red onion, finely chopped
- 1 bunch cilantro leaves, finely chopped
- ½ cup rice vinegar
- ½ cup olive oil
- 1/3 cup white sugar
- ½ teaspoon garlic powder
Directions:

- Mix beans, corn, green chilies, jalapeno, red and green bell peppers, onion and cilantro together in a large bowl.
- To make a dressing, stir together the vinegar, oil, sugar and garlic powder in a sauce pan. Bring to a boil.
- Once boiled, remove from heat, and allow to cool.
- When cooled, pour dressing over bean mixture, and toss to mix evenly.
