Best Ever Cowboy Caviar

Ingredients:

  • 2 15-oz cans, black beans, rinsed and drained
  • 2 cans pinto beans, rinsed and drained
  • 2 15-oz cans of white corn, rinsed and drained
  • 1 4-oz can chopped green chilies, undrained
  • 1 jalapeno pepper, seeded and finely chopped (optional)
  • 1 red bell pepper, cored, seeded, and finely chopped

  • 1 green bell pepper, cored seeded, and finely chopped
  • 1 small red onion, finely chopped
  • 1 bunch cilantro leaves, finely chopped
  • ½ cup rice vinegar
  • ½ cup olive oil
  • 1/3 cup white sugar
  • ½ teaspoon garlic powder

Directions:

    1. Mix beans, corn, green chilies, jalapeno, red and green bell peppers, onion and cilantro together in a large bowl.
    2. To make a dressing, stir together the vinegar, oil, sugar and garlic powder in a sauce pan. Bring to a boil.
    3. Once boiled, remove from heat, and allow to cool.
    4. When cooled, pour dressing over bean mixture, and toss to mix evenly.
