Oatmeal for Everyone

Oatmeal really is the breakfast of champions. It keeps you full and gives you energy for hours and be prepared to fit anyone’s tastes. Let’s start with the basics.

BASIC OATMEAL

Single Serving

Ingredients:

  • 1 cup rolled oats
  • 2 cups water

Directions:

  1. In a small pot, bring the water to a boil.
  2. Add oats and immediately turn the heat to low and place a lid on the pot.
  3. Cook for 5 minutes until the oats are soft and tender and most of the water has cooked off.

Note:

You can add more water if you like your oatmeal smooth and thin, or use slightly less if you want a thick oatmeal.

For those that prefer something sweeter…

Coconut and Lime Oatmeal

  • ¼ cup shredded unsweetened coconut
  • 1 tablespoon brown sugar or honey
  • Juice of ½ lime

Add the coconut and sugar (or honey) to the water. Cook as described above. Turn off the heat and squeeze the juice of half a lime over the top.

Baklava Oatmeal

  • 1 teaspoon cinnamon
  • 1 teaspoon orange zest, finely grated
  • 1 tablespoons honey
  • 2 tablespoons almonds, chopped

Add the cinnamon, orange zest, and 2 tablespoons of honey to the water. Cook as described above. Once it’s cooked, top each bowl with a tablespoon of nuts and orange slices.

Apple Cinnamon Oatmeal

  • 1 teaspoon of cinnamon
  • 1 apple pealed cored and chopped small
  • 1 tablespoon of brown sugar

Add the cinnamon, apples, and 1 tablespoon of brown sugar to the water. Cook as described above. Once it’s cooked, top each bowl with a tablespoon of nuts or seeds and more fresh apples.

Or, if you also have a hard time getting out of bed in the morning, you can try overnight oats.

OVERNIGHT OATMEAL

Ingredients:

  • ½ cup quick or rolled oats
  • ½ cup unsweetened vanilla almond milk, water, dairy milk, soy milk, half- and-half or juice, in any combination
  • ½ banana, mashed (optional)
  • Your favorite toppings — you pick!

Add oats and liquid to 8-oz mason jar. Top with your desired additions. Examples:

Blueberry Muffin
½ small banana, mashed
2 tbsp blueberries
¼ tsp lemon zest
½ tsp maple syrup

Almond Joy
½ small banana, mashed
½ tsp cocoa powder
¼ tsp coconut extract
1 tbsp shredded coconut
1 tbsp slivered almonds
½ tsp maple syrup

Pina Colada
½ small banana, mashed
2 tbsp crushed pineapple
¼ tsp coconut extract
1 tbsp shredded coconut
½ tsp maple syrup

German Chocolate
½ small banana, mashed
1 tbsp chopped pecans
½ tsp cocoa powder
¼ tsp coconut extract
½ tsp maple syrup

Almond Butter & Jelly
½ small banana, mashed
1 tbsp almond butter
1 tbsp berry jam
½ tsp maple syrup

Banana Nut Bread
½ small banana, mashed
1 tbsp chopped nuts
¼ tsp cinnamon
Pinch nutmeg
1 tbsp almond butter
½ tsp maple syrup

Carrot Cake
½ small banana, mashed
2 tbsp grated carrot
1 tbsp chopped pecans
½ tsp maple syrup
