New FoodFit sessions
Our Spring FoodFit session is just winding down, and we’ve had so much fun we’re already planning another for this summer! Over the last 10 weeks, our FoodFit participants have learned to cook over 30 new recipes like Cowboy Caviar, Maple Muddles, and Oatmeal Date Cookies.
Best Ever Cowboy Caviar
Ingredients: 2 15-oz cans, black beans, rinsed and drained 2 cans pinto beans, rinsed and drained 2 15-oz cans of white corn, rinsed and drained 1 4-oz can chopped green chilies, undrained 1 jalapeno pepper, seeded and finely chopped (optional) 1 red bell pepper, cored, seeded, and finely chopped
Tomato Bruschetta
Ingredients: 4-5 Fresh tomatoes, diced 2-3 Cloves finely chopped garlic 10 Fresh basil leaves, shredded Small handful of chopped fresh parsley 1-2 Tablespoons olive oil Salt and pepper to taste Pinch of red pepper flakes (optional)
